Easy Fruit Cake

Ingredients

350g mixed dried fruit

100g sugar

100g margarine

150ml water

1 egg

225g self raising flour

 

Method

1.     Heat oven to 300 deg F and grease a loaf tin.

2.     Place the fruit, sugar, margarine and water in a pan simmer for 20 mins.

3.     Remove the pan from the heat and allow to cool then add the egg and flour.

4.     Pour into the prepared tin and bake in the preheated oven for approximately 1 ½ hours.
