Method

Preheat
oven to 200°C, 400°F, gas mark 6. Take the peppers and core, deseed and
quarter them. Quarter the tomatoes and onion as well. Place them on a baking
tray and sprinkle with olive oil and the crushed clove of garlic. Cook for 20
minutes.

Break
the bread into little pieces and place in a food processor. Whizz into fine
breadcrumbs and put in a bowl.

Grate
the cheese and add to the breadcrumbs. Steam the broccoli for 5 minutes.

Mix
together all the vegetables with the can of chopped tomatoes. Place in a
flameproof/ovenproof casserole dish. Sprinkle over the breadcrumb and cheese
mixture. Place under a medium grill until the topping is golden and melted.
