Method

·         Finely chop the onion. Dice the carrots, courgette and red pepper, removing the core and seeds. Slice the mushrooms.

·         Place everything in a large non-stick saucepan. Allow to soften for a few minutes over a gentle heat. Add chopped tomatoes and chilli beans. Continue to cook for 20 minutes.

·         Serve on a bed of rice with a spoonful of Healthy Choice crème fraîche.
