Method

Preheat
oven to 200°C, 400°F, gas mark 6. Par-boil the potatoes for 15 minutes. Drain
and halve.

Finely
chop the onion; core, deseed and cube the pepper, and slice the courgette. Mix
the vegetables with the potatoes and chopped tomatoes.
·
Place in
an ovenproof casserole, sprinkle with the grated cheese and cook in the
preheated oven for 25 minutes.
