Method

To make
the cheese sauce, melt the butter in a saucepan, add the flour and cook for a
minute. Gradually add milk, stirring, until you have a smooth thickened sauce.
Add 40g (11⁄2oz) of the grated cheese.

Cut the
leeks into chunky slices and break the broccoli into florets. Steam over boiling
water for 5–7 minutes. Meanwhile, grill the bacon and tomatoes for several
minutes each side.

Place
drained vegetables in an ovenproof/flameproof dish. Pour the sauce over them.
Sprinkle over remaining cheese. Place under a hot grill until cheese has melted
and browned a little. Serve with strips of the bacon and the grilled tomatoes.
