Method

·         To make the cheese sauce, melt the butter in a saucepan, add the flour and cook for a minute. Gradually add milk, stirring, until you have a smooth thickened sauce. Add 40g (11⁄2oz) of the grated cheese.

·         Cut the leeks into chunky slices and break the broccoli into florets. Steam over boiling water for 5–7 minutes. Meanwhile, grill the bacon and tomatoes for several minutes each side.

·         Place drained vegetables in an ovenproof/flameproof dish. Pour the sauce over them. Sprinkle over remaining cheese. Place under a hot grill until cheese has melted and browned a little. Serve with strips of the bacon and the grilled tomatoes.
