Method

Finely
chop the onion and add it to a saucepan with the mince and brown.

Dice the
carrot and courgette and add them to a pan and cook for a few minutes. Crumble
in the stock cube. Add the tomatoes and cover and cook for 20 minutes. Preheat
oven to 220°C, 425°F, gas mark 7.

Sieve
the flour and baking powder into a bowl. Add the butter in pieces and rub in
until breadcrumbs. Grate the cheese and add with 50ml (2fl oz) water. Mix to a
smooth dough.

Pat
dough to 1cm (1⁄2in) thick. Cut out 4 scones. Place half of the mince into
an ovenproof dish and top with 2 of the scones. Cook for 20 minutes.
